These delicious little peanut butter cup cookies were almost never created…we were supposed to bring something sweet with us to a friends house and we settled on some store bought little treats from one of our favorite stores. Well, the mini peanut butter cups melted! What could one do but make cookies?? So we put the melted peanut butter cups in the fridge and set out to make these beauties while they firmed up.

My family couldn’t help but try a few before we headed out to our friends home…thankfully, this recipe made plenty!

I never thought I would say this, but I am SO happy that they melted! Of course, you can also use “non melted” mini peanut butter cups too…those would be delicious as well! 🙂

Dive in and try them out! They would even be the perfect Valentine’s Day treat for your favorite chocolate and peanut butter fan!
