I was looking for something quick to make for Easter to bring to my brother’s home for our family celebration and this was the perfect! It was so refreshing and I had such a fun time making it with my niece Madison. We were able to make it rather quickly and get back to the festivities.
Here is what we did:
Ingredients:
1 can of sweetened condensed milk
1/2 c. Key Lime Juice
2 Eggs
9 Full Sheets of Graham Crackers (one sleeve or about 1 and 1/2 cups)
1/4 c. sugar
1/4 c. melted butter
Instructions:
First my niece crushed the graham crackers into fine crumbs in a Ziploc bag. Then, she added in the sugar and the melted butter. We then together pressed this mixture into the bottom of a 9X13 inch glass baking dish.
We then baked the crumb crust for 5 minutes at 325 degrees.
Next, we zested several of the limes to make 1 teaspoon of zest and sprinkled it onto the crust. Then, we whisked together the key lime juice (freshly squeezed), the eggs and the sweetened condensed milk until they were smooth and poured it on top of the graham cracker mixture that was pressed into the pan.
You can serve this with a dollop of whipped cream, or just simply cut into squares as we did. These bars have a great balance of tart and sweet and were a hit at our Easter celebration.
