Sausage and Pepper Omelet

Ingredients

Scale

3 eggs, whisked until combined

3 links Sausage, chopped

¼ cup Peppers, diced

¼ cup Onions, diced

¼ cup Parsley, chopped

¼ cup Mushrooms, finely chopped

Salt

Pepper

Instructions

  1. Sauté your sausage and set it aside.
  2. Season the veggies (including parsley, reserve a bit for garnish) with salt and pepper and sauté the veggies until tender.
  3. Add veggies to the sausage and set aside
  4. Wipe out your pan and add ½ teaspoon oil.
  5. Pour in your whisked eggs and swirl around the pan until the bottom of the pan is covered.
  6. Cook on low for a minute or two until the edges are solidified and the middle starts to become more solid.
  7. Flip the omelet and cook on the 2nd side for a minute and put on the plate.
  8. Top with sausage and veggies and roll veggies inside of the omelet.
  9. Top with chopped parsley
