What is in the Box this Week? – Part 2

The boxes have arrived and here is the proof:

Oops…did you see the baby bottles in that first picture? Good thing I took this second one. 🙂

Everything arrived as they said it would. Here is our first creation…Mother and Daughter salad lunch! Yum!

We used the lettuce, fresh from the farm with a little chopped spinach, two carrots…one shredded, one in curls, a bit of Parmesean Cheese, some tomatoes from a week or so ago, and some cucumbers that I had soaked in seasoned rice wine vinegar. We then topped it with some of yesterday’s chopped chicken and we chose our favorite salad dressings. I also topped mine with avocado. Yum! This salad was pretty easy to pull together with all of the items prepped and in the fridge!

Here are the prepped veggies. Aren’t they colorful!

Here is how I prep the greens in the box. First I chop or tear them and place them in a colander for cleaning:

Then, I spread them out on a towel to dry.

I see this radicchio being braised with some apple, pomegranate, and bacon. Yum! We will see.

By washing the greens, they are all ready for me. And, by drying them…they will last longer in their jars in the fridge.

Here is another shot, where I cleaned the lettuce. I wanted to point out how you can roll the lettuce and other greens up in the towel in order to dry more completely.

I let them sit rolled up for a couple of minutes and then unroll to complete the drying. They do not have to be completely dry, but the dryer the better.

Here is the lettuce…in it’s first staring role! 🙂
