Tasty Popcorn Chicken

Popcorn Chicken Tuesday night was date night at our home so my husband and I were going to head out together for the evening. I like to make a special dinner for my daughter at times when we go out, so this time I made what ended up being called “Popcorn Chicken”. I have to tell you…it was SO good that we contemplated staying home and having that for dinner. 🙂 Even my littlest enjoyed some and that is saying a lot since chicken is not normally his favorite.

This is one of those recipes that can be scaled based on how much chicken you need to make.

Here is how you do it:

First, cut two chicken breasts into bite-sized pieces and place in a bowl.

Then, add 1 cup of flour to a bowl and season it well. I added paprika, pepper, salt and poultry seasoning. You should be able to see flecks of each spice in the flour. If you can’t see it, there isn’t enough. Then, crack 3 eggs and beat them until the whites are combined with the yolks. Add a two pinches of salt and pepper to the eggs. At this time, also heat 1 inch of oil in a large frying pan.

Using tongs, pick up a few pieces of chicken and place them in the egg mixture and move around to coat. Then, place them in the flour and move around to coat. If you want a thick crust, just place them back in the egg and then back in the flour. But, we were happy with one “dipping”. Now, place them in the oil. Be sure to leave room around the pieces of chicken so your oil holds a good temperature.

After about a minute and a half turn your chicken over in the oil. Remember to use a different tool than you used to dip the chicken so you don’t cross contaminate your chicken with raw chicken.

Wait another minute and a half (or until the 2nd side is brown) and remove the chicken from the oil. Because the pieces are so small, it cooks very fast. Place the chicken on a paper towel to drain off the oil. Sprinkle lightly with salt.

If you can keep from eating the chicken long enough to get it on the table, place it in a serving bowl. 🙂

This could be served with dipping sauce, but I served it just like it is along side a green salad. The keys to this delicious chicken are generous seasoning, and cooking time.
