Happy Saturday Everyone!
This week flew by and here we are…Saturday! I look forward to the slower speed of Saturdays where we are all home, or at least together somewhere. Usually the school work is done for the week, my daughter can sleep in, and my husband and I can take the time for Saturday morning coffee with our littlest…who now enjoys his hot chocolate with us…he is getting too old! Off to enjoy the day!

Thursday was soup day with my Ground Beef Stroganoff Soup, named by my daughter:
And, Friday. Surprisingly Light Tuna Casserole…it is a great place to use some healthy cottage cheese and yogurt:
