“Octoberfirst” Meal

My husband named this meal. He took a bite and said it tasted like “Octoberfest”…of course, silly me, since it is October first today, I had a little fun with that.

This is the meal that came from the prepped ingredients from this morning.

Here is the list:

4 Chicken Sausages, cubed (with Basil…if you can’t find these, just add basil to your recipe)
2 Tablespoons of Butter
1 cup Onions
1 cup Kale
1 cup Sweet Peppers
1 cup shredded apple (2 apples)
Salt and Pepper to taste
2 cups brown rice

Instructions:

First, add your onions, butter, apples and sweet peppers to your hot pot.

Stir and cook until softened. Then, add the kale, and sausage

Press it down so it can cook until brown on the underside. This will take about 10 minutes, without stirring. Once you have waited 10 minutes or so, flip the mixture over/stir and cook the other side/parts. Once it has cooked and has begun to turn brown, add the brown rice and stir. Heat through.

We served our meal in bowls with “Idaho Zucchini” on the side.
