Mom’s Peanut Butter Cookies

Peanut Butter Cookies I will always remember how much my grandmother enjoyed cookies. She seemed to enjoy smelling them baking as much as she did eating them. I remember her waking up from her afternoon nap. She would get a small cup of coffee and reheat it and she would enjoy something sweet with it, like a cookie. When she was older, and not able to do as much for herself, my mom would bring cookie dough to her home and leave it with her so she could bake it herself and smell the cookies when she wanted to without quite as much work. She still had the satisfaction of serving fresh, homemade cookies to her guests and enjoy them with her coffee. My mom really blessed her so much with these little acts of kindness.

As I baked these cookies, I thought of my mom and grandmother and the great heritage I have had. While I am pretty sure that these cookies won’t stir up the same memories for you, perhaps you can build some of your own as you bake them. 🙂

Mix the following ingredients thoroughly:

1/2 cup Butter, softened
1/2 cup Peanut Butter
1/2 cup Sugar
1/2 cup Brown Sugar
1 Egg

Sift together and mix into the wet ingredients:

1 1/4 cups Flour
1/2 teaspoon Baking Powder
3/4 teaspoon Baking Soda
1/4 teaspoon Salt

Mom's Peanut Butter Cookies

Chill dough for 30 minutes. Roll into balls the size of large olives and place 2″ apart on a baking sheet. Flatten with a fork dipped in flour making crisscross marks.

Bake at 350 degrees for 8 – 9 minutes or until set but not hard.

Makes 3 dozen 2 inch cookies.

These cookies are chewy and full of peanut butter flavor. They always remind me of my mom and grandma. I hope you enjoy!
