Melt in Your Mouth Sugar Cookies

Melt in Your Mouth Sugar Cookies I have finally found it…a great, quick sugar cookie! The only part I am not completely comfortable with is the shortening. I will have to experiment on getting the same texture without it…stay tuned. 🙂

These cookies are soft and mild in flavor and were great, even without icing. I found the recipe here at bhg.com. If you are looking for a quick, no need to refrigerate, tasty sugar cookie…look no further! Here it is!

Ingredients

1/2 cup butter, softened
1/2 cup shortening
2 cups sugar
1 teaspoon baking soda
1 teaspoon cream of tartar
1/8 teaspoon salt
3 egg yolks
1/2 teaspoon vanilla
1 3/4 cups all-purpose flour

Instructions:

Cream the shortening and butter together and then add in the sugar. Mix until fluffy.

Soft Sugar Cookies

Add in the egg yolks, baking soda, cream of tartar, vanilla and salt and mix until combined.

Melt-in-your-mouth Sugar Cookies

Add in the flour and mix until combined.

Melt-in-your-mouth Sugar Cookies

Roll into 1″ balls and bake in a 300 degree oven for 12-14 minutes.

I baked mine until they were set, and only slightly brown to keep them soft. They puffed up and then settled a bit and were a HIT with our Bible Study last night. This will be a recipe for the drop type sugar cookies that I will keep around for sure. I am not sure it would roll out well for cutting with cookie cutters, but I do plan to try.

    Did you mash the cookie ball before baking?
    Would you try coconut oil in place of shortening?

      Hi Emily! I did not mash the ball before baking. If just flattens right out. Great idea on the coconut oil. I have some and will try it and report back. 🙂
