Fast and Easy Mexican Chicken Soup

This Mexican Chicken Soup was more delicious that I imagined it would be. The broth is rich and flavorful and is reminiscent of tortilla soup and I didn’t even miss the tortillas! The toppings…any soup with toppings is on the top of my list!

We enjoyed this meal on a Thursday night when we are all running off to serve in the Awana ministry at our church. All of the adults serve with different ages and our littlest is in the K-sparks group. We all enjoy being a part of this ministry…so meal time is a bit rushed on Thursdays! But its totally worth it!

Fast and Easy Mexican Chicken Soup

At the time I was writing this post, we are on our 5th day of Whole30. Both my husband and I are all in this time and are going strong. He feels great…I am feeling pretty good too, and thankful that I don’t have a headache today…so very thankful!

Fast and Easy Mexican Chicken Soup

Here’s what I did:

Fast and Easy Mexican Chicken Soup

Rich broth, tender chicken, sweet peppers and delicious toppings will make this a family favorite on those cold nights!

Ingredients

Scale

2 tablespoons avocado oil

1 cup onion, finely chopped

1 jalapeno, seeded and finely chopped

2 medium red or yellow bell peppers, chopped

4 cloves garlic, minced

12 teaspoons salt (to taste)

6 cups chicken bone broth or Whole 30 compliant chicken broth

1 can fire-roasted tomatoes in their juice

2 teaspoons chili powder

3 cups shredded cooked chicken

chopped fresh cilantro

1 avocado, halved and sliced

Lime wedges

Instructions

Heat the oil in a large pot over medium-high heat.

Add in the veggies, garlic and salt.

Cook until the veggies are crisp tender.

Add the broth and chili powder into the pot and bring to a boil.

Allow to simmer for 10 minutes.

Add the chicken and cook an additional 1-2 minutes

Serve the soup with the cilantro, avocado, and a squeeze of lime
