Fast and Easy Mexican Chicken Soup

Fast and Easy Mexican Chicken Soup

This month’s recipes are all about the January Whole30 and they are all about Fast and Easy. Click here to learn more about the Whole30 Reset Program. This Mexican Chicken Soup was more delicious that I imagined it would be. The broth is rich and flavorful and is reminiscent of tortilla soup and I didn’t even miss the tortillas! The toppings…any soup with toppings is on the top of my list!

We enjoyed this meal on a Thursday night when we are all running off to serve in the Awana ministry at our church. All of the adults serve with different ages and our littlest is in the K-sparks group. We all enjoy being a part of this ministry…so meal time is a bit rushed on Thursdays! But its totally worth it!

At the time I was writing this post, we are on our 5th day of Whole30. Both my husband and I are all in this time and are going strong. He feels great…I am feeling pretty good too, and thankful that I don’t have a headache today…so very thankful!

Add the chicken and cook an additional 1-2 minutes

Serve the soup with the cilantro, avocado, and a squeeze of lime

I will be keeping this recipe at my fingertips because we have many nights like this one!
