Back in the Saddle (or Mason Jar) Again…

FotoFlexer_Photo I don’t know about you, but the holidays threw me for an organizational loop. Between Thanksgiving, Christmas, New Years, some travel thrown in here and there, and fighting a severe bout of Bronchitis, my fridge was a MESS! The drawers were full of random veggies, the shelves were scattered with leftovers and dare I say it…take-out boxes. All of this, and no real food to cook…which was fine because there was little time to cook. I even canceled my farm boxes for 6 weeks.

Back in the Saddle Again...

Once we returned to normalcy, and I finally mostly conquered Bronchitis, the boxes returned. Last week’s sadly never made it to jars. I used about 1/2 of what was brought. 1/4 went to waste, sadly. I still have 1/4. The drawers were still filled with varied veggies, still in their bags. But, alas, I am back in the saddle!

This week’s box arrived and I finally stirred up the motivation! Salads have been made, potatoes mashed, homemade dressings mixed, and yes, you guessed it, veggies back at home in their very own mason jars! It is so refreshing to look in the fridge and see everything in its place. And, instead of leftovers, colorful produce is staring back at me. That is motivational.

There is still a little work to do on the fridge…but, I am so encouraged to see jars of fresh, delicious, produce. Back to healthy cooking and eating!
