Adding Interesting Texture to Your Salad

One of our favorite meals is salad…we like to add meat and cheese and tortilla strips and yummy dressing and all kinds of veggies. Well, for this “Chicken-less” Chinese Salad, even though it was just a side salad, I decided to take a cue from the things we like about meal salads.

In just a few minutes, I was able to toast some slivered almonds…yummy and good for you, and also crisp up some wonton strips. No nutritional value with those, but the delicate crunch was so, so good! For this salad, I was even able to include mushrooms since the toppings and dressing were so tasty! 🙂 We are still using up the great dressing from Costco…topped with a bit of fresh orange juice and some orange zest. I will make my own next time. Not, because theirs isn’t good…just better to know how to do it. 🙂
