Sweet and Spicy Carrot Ginger Soup

Sweet and Spicy Carrot Ginger Soup by MyLifeAsRobinsWife.comSweet and Spicy Carrot Ginger Soup…tastes like summer and satisfies the desire for a light and healthy meal that will get you out of the kitchen quickly to enjoy life!

Yesterday, my little son and I took at trip to our local farmer’s market. It is so fun to show him the huge variety of fruits and veggies and let him taste the samples that the vendors freely give to entice you to buy their offerings. He is thrilled to enjoy the juicy strawberries and the sweet oranges and of course the Kettle Corn. Then, it was off to the playground with some dear friends of ours. It was a fun morning that made me so thankful to have the privilege to be home with my children.

When I returned home with my locally grown treasures, my little one napped, and I created. So much fun!

I found a great deal on fresh carrots, so what could be better than Sweet and Spicy Carrot Ginger Soup? And…this gave me a chance to try out my new Vitamix on something other than a smoothie or peanut butter…though those are amazing too!

Sweet, spicy from the ginger and creamy from the mascarpone…delicious!

I garnished mine with a bit of sour cream and some more fresh parsley and it was delicious!!  The rest of my produce will go into mason jars in the fridge so it last until next week when we will go again and stock up.  I am always amazed at how long the produce lasts in these jars AND how much more likely we are to eat the produce when it is washed and ready.  I hope you have some time to visit your local farmer’s market and support your local farmers.  The produce is delicious and the experience is one of a kind.

Blessings!
