Parmesan Thyme Mashed Potatoes

Parmesan Thyme Mashed Potatoes This past Sunday I decided to spruce up our regular mashed potatoes. I peeled, sliced in half and then boiled (in salted water) 6 potatoes for about 20 minutes and then drained them. I leave them in larger pieces so they soak up less water during the boiling process. It seems to yield richer potatoes. I mashed them with a potato masher and added in 2 tablespoons of butter and enough milk to make them creamy. Then, I added in 1/3 parmesan cheese and 1 teaspoon of fresh thyme.

These potatoes were a great accompaniment to the Seriously Good Salmon Cakes we also made that day! Try them out…you won’t regret it…unless of course you don’t like thyme…potatoes…and parmesan cheese. Then, you might regret it. :)
