Open Me! Open Me!

That is what the boxes say to me each Tuesday morning when they arrive.  Really, it is what most packages say to me. 🙂  Here is today’s line up:

1 lb Yellow Onion
1 Spaghetti Squash
1 lb Sweet Potato
1 Bulb Garlic
5 Bell Peppers
3/4 lb Green Beans
1 lb Baby Bok Choy
2 Bunches Red Radish
1 Bunch Beet
2 Bunches Broccoli
2 Bunches Carrots
4 Fuji Apples
2 Red Bartlett Pears
1 Red Pomegranate
4 Bartlett Pears
1 Keitt Mango
1 Pint Strawberries
1 Head of Butter Lettuce

This is a lot of great produce! This morning, while prepping the items for their jars, I also roasted the beets, baked the sweet potatoes, and baked the spaghetti squash. These three items that cook for about an hour at 400 degrees. So often, I am trying to make dinner in a reasonable amount of time and because of their cooking time, these items would remain unused. Prepping them ahead, gives me the jump start I need to use them.

Another thing I have begun doing is to line the sink with the bag that comes in the box of produce. This way, all of the waste goes right inside, instead of on my counter or worse yet, my floor. 🙂 If you don’t have a large bag like this one, try one of your grocery sacks or a large bowl. It really speeds the clean up process on Produce Prep Tuesday.

It still needs some TLC. I just finished research recipes to use it all up…now that I know what I will do with it, I can chop it and put it into jars as well.

Finally, the spaghetti squash.

    Hi Diane!! I got my first delivery today….actually I heard it “thump” on my porch last night and got excited.

    I “prepped” this morning, Diane style. I had a quick questions. I did the Fast Fruit & Veg. Not sure what size, it was the $31.50 size. Got some amazing stuff. Could you tell me what boxes you order? As I would love to get some squash and root veggies too!

    • Hi Kathryn, I am so glad you got your box and that I have a kindred “prepper” :). I order the fast fruit and veggie (same one as you) and the all veggie also $31.50. I find that it gives me a good balance. And, as long as I prep ahead of time, I am able to use it all. Hope that helps! Have a wonderful day!

    I wish we could get our produce like you. Something they keep talking about but still not happening. I really feel we would eat better. And we have so many local markets in our area I am sure they would love the extra business. Fingers crossed that some day.

    • I hope that they are able to do that some day! That would be great! There are some grocery stores that deliver as well. Even though that is not local produce, it would still be a great blessing.

    Okay, you have inspired me to try preparing the veggies in advance. In our climate I am not sure about getting farm fresh pruduce delivered (they may only do spring – fall, so it would be late to start now). I will check into that in the spring. For now I need to get back into meal planning and start doing the prep.
